    CUCUMBER AND LEMON SALSA

    1 lemon, peeled
    1/4 cup chopped fresh dill
    2 tablespoons extra-virgin olive oil
    1/2 teaspoon kosher salt
    2 cucumbers (peeled if desired), roughly chopped

    Roughly chop the lemon. Remove and discard any seeds. In a bowl, combine the lemon, dill, oil, salt, and cucumbers. Serve with salmon.
