    AVOCADO ROLLS

    Makes 4 servings

    1 firm avocado
    1 red pepper, seeded
    1 carrot, shredded
    Juice of one lemon
    Alfalfa sprouts
    2 scallions, minced
    4 Wonton/egg roll wrappers or nori sheets
    Salt to taste

    PREPARATION

    Peel and slice the avocado. Thinly slice the red pepper. Coat avocado with lemon juice and a sprinkling of salt. Place avocado slices on sheets/wrappers with carrot, sprouts, red pepper, and scallions. Roll, seal, and serve immediately. Makes 4 servings.
