HEALTH SOUP
from "Soup, A Way of Life" by Barbara Kafka
 Practically an instant soup, so there isn't really any point in making ahead, although for a party, it can be made a few hours in advance if desired.
Makes 4 cups (1 L); 4 First-Course Servings

8 sprigs parsley, leaves only
10 spinach leaves, well washed
1/2 cup watercress sprigs
4 cups basic chicken stock or a vegetarian stock
4 cloves garlic, smashed and peeled
Kosher salt, to taste
Freshly ground black pepper, to taste

In a food processor, chop the parsley, spinach, and watercress. Scrape into a small saucepan.
Stir in the stock and garlic. Bring to a boil. Lower the heat and simmer for 10 minutes. Season with salt and pepper.
