    VOLUPTUOUS ROASTED RED PEPPER SPREAD

    Invented one October to use the last batch of red and yellow peppers left after an early frost, this late-summer favorite speaks of abundance. It has a romantic soft peachy-salmon color, silken texture, and full flavor. Serve with crudités or crackers.

    Where dips are concerned, I'm a little like Goldilocks — cream cheese- or sour cream-based dips are too creamy, bean dips and spreads are often not creamy enough (unless you add a lot of tahini, olive oil, or peanut butter). But this is "just right," thanks to the use of both neufchâtel cheese (a dead ringer for cream cheese, yet with 30 percent less fat) and beans. These point up but do not overwhelm the lustrous, distinctive flavor and texture of roasted red or yellow bell peppers (use them interchangeably as long as they are big, blocky, and firm). The surprise secret ingredient is golden miso. Sweet, salty, and rich, it brings everything together.

    INGREDIENTS (CLICK TO BUY)

    3 red bell peppers, roasted
    1 yellow bell pepper, roasted
    1 large or 2 small cloves garlic, quartered
    8 ounces neufchâtel reduced-fat cream cheese
    1 can (15 ounces) chickpeas, well drained
    1 1/2 teaspoons golden miso (traditional white miso)
    Freshly ground black pepper to taste
    Juice of 1/2 to 1 lime
    Minced Italian parsley (optional)

    PREPARATION

    Combine all the ingredients except parsley in a food processor. Pulse until smooth. Scrape the spread into ramekins or a serving bowl. If served immediately, it is a little on the runny side, but if refrigerated for an hour or two it firms up considerably. Garnish with parsley, if desired, and serve.
