    ASPARAGUS WITH MORELS

    This is a star dish. Do not serve it with anything else, not even rice or pasta.

    Makes 3 cups, serves 4 as a first course
    INGREDIENTS (CLICK TO BUY)

    2 ounces dried morels
    1 tablespoon olive oil
    3/4 pound medium asparagus (about 1/2 inch thick spears), peeled and trimmed, cut into 1 1/4 inch pieces, stems and tips reserved separately
    1 heaping tablespoon chopped fresh tarragon
    1 tablespoon cornstarch
    1/2 cup Enriched Beef Stock or 1 cup unsalted beef stock, reduced by half
    Kosher salt and freshly ground black pepper to taste

    PREPARATION

    Bring 3 cups water to a boil in a medium saucepan. Add the morels and boil for 1 minute. Turn off the heat. Allow the morels to sit for 20 minutes. Drain, reserving the liquid.
    Strain the morel liquid through a fine sieve, or a sieve lined with a clean kitchen towel, into a medium saucepan. Reduce over low heat to 1 cup. If the liquid appears gritty, strain once more through a coffee filter.
    Cut the morels into 1-inch pieces, or leave whole if small. Rinse briefly.
    Heat the oil in a 10-12-inch frying pan. Add the asparagus stems. Cook for 1 minute over high heat. Reduce the heat to medium. Add 1/2 cup of the morel liquid. Cook for 2 minutes.
    Add the asparagus tips, morels and tarragon. Dissolve the cornstarch in 1/4 cup of the beef stock. Add to the pan and stir for 1 minute. Add the remaining mushroom liquid and stock. Cook until the asparagus tips are just tender to a knife tip and the sauce is a shiny glaze. Salt and pepper to taste.
