Latkes, potato pancakes, are a specialty of the Jewish restaurants on Miami Beach, where they're eaten not only at Hanukkah, but all year long. Sweet potatoes give the recipe a Southern twist.

Makes 8 to 10

1 large sweet potato (about 1 pound), peeled*
1 very small onion
1 egg, beaten
1/2 teaspoon baking powder
2 to 3 tablespoons all-purpose flour or matzoh meal
About 2 cups vegetable oil, for frying
Confectioners' sugar, applesauce, and/or sour cream, for serving

1. Shred the sweet potato and onion on the julienne disk of a food processor or on the coarse side of a hand grater.
2. Toss together the potato, onion, egg, and baking powder in a mixing bowl. Stir in enough of the four to hold the mixture together.
3. Just before serving, pour the oil to a depth of at least 1 inch in a frying pan or electric skillet and heat to 350°F. Using 2 spoons, form the sweet potato mixture into 3-inch pancakes. Lower these into the fat. Fry the latkes, 4 at a time, turning with a slotted spoon or wire skimmer, until golden brown on both sides, about 2 minutes total.
4. Using a skimmer or slotted spoon, transfer the latkes to paper towels to drain. Sprinkle with confectioners' sugar and serve with applesauce and/or sour cream.
