CRANBERRY SODA
from "Drinks Without Alcohol" by Jane Brandt

This is a colorful and unusual drink – great to serve up when cranberry season starts.

Servings: 6 tall glasses
INGREDIENTS (CLICK TO BUY)

2 cups fresh cranberries, rinsed and stemmed
1 cup water
Pinch of salt
1 cup sugar
1 pint vanilla ice cream
1 quart club soda

PREPARATION

1. Place the cranberries, water, salt, and sugar in a medium-size saucepan. Bring to a boil. Reduce the heat and simmer until the cranberries burst and are soft, about 5 minutes. Set aside to cool.
2. When ready to serve, place a spoonful of ice cream in each tall glass. Add 2 or 3 teaspoons of the cranberry mixture, and fill the glass with club soda. Add a colored straw and stir gently.
