    SPICY ALMOND SOUP

    If making ahead and refrigerating, save the final addition of orange juice until just before serving, as the flavor of orange juice gets stronger as it sits.

    Makes 4 cups (1 L); 4 First-Course Servings
    INGREDIENTS (CLICK TO BUY)

    1 large bunch cilantro, leaves only
    2 small jalapeño peppers, cut into 1/2-inch slices, seeds intact
    2/3 cup whole blanched almonds
    4 medium cloves garlic, smashed and peeled
    1 teaspoon ground cumin
    2 tablespoons olive oil
    1 1/2 cups orange juice
    4 slices firm white bread, crusts removed, torn into large pieces
    1/2 cup fresh lemon juice
    1 cup ice water
    2 teaspoons kosher salt

    PREPARATION

    In a food processor, finely chop 1 cup cilantro leaves and the jalapeños. Set aside.
    In a blender, purée the almonds, garlic, cumin, olive oil, and 1/2 cup orange juice, stopping several times to scrape down the sides of the jar. Scrape half of the puree into a small bowl. Add half of the bread, 2 tablespoons of the remaining orange juice, 1/4 cup lemon juice, and 1/2 cup ice water to the puree in the blender. Blend until very smooth, stopping once or twice to scrape down the sides of the jar. Scrape into a large metal bowl. Repeat with 2 tablespoons orange juice, the remaining purée, bread, lemon juice, and water.
    Stir in the reserved cilantro mixture, the remaining orange juice, and the salt. Refrigerate for 2 hours, or until cold.
    If the soup is too thick, thin it a bit with water or orange juice. Pour into bowls and top with the remaining cilantro leaves.
