Huevos Rancheros is one of the most famous and popular tortilla dishes. Fried to perfection in butter, quickly slipped onto a crisp tortilla, doused with Ranchero Sauce, and graced with shredded cheese, the simple egg is transformed

For the Sunny Fried Eggs
4 tablespoons (1/2 stick) butter
12 large eggs
2 tablespoons water
12 corn or flour tortillas, warmed or crisped just before serving

Ranchero Sauce (recipe follows)
3 cups shredded cheese, Cheddar, Jack, queso fresco, or a mixture
4 cups shredded lettuce
Fresh tomato salsa or salsa verde

For the Ranchero Sauce
1 jalapeño chili pepper, stemmed
1 medium onion
2 garlic cloves
4 medium tomatoes
1 1/2 teaspoons chopped fresh oregano or 1/2 teaspoon dried
1/4 teaspoon pure chili powder
1/4 teaspoon salt
1/2 cup water

To Make the Huevos Rancheros
1. For Sunny Fried Eggs: Divide the butter between 2 frying pans large enough to hold 6 eggs each. Set over medium heat. When the butter melts and bubbles, gently crack the eggs, and drop into the pans without breaking the yolks. Drizzle 1 tablespoon water all around the outside edge of the eggs in each pan. Cover the pans, reduce the heat to low, and cook until the whites are set and the yolks are firm, about 3 minutes.
2. To assemble the huevos rancheros, place 1 fried egg on a tortilla. Top with Ranchero Sauce and shredded cheese. Fold and serve.
To Make the Ranchero Sauce
1. In a food processor or using a chef's knife, coarsely chop the chili pepper, onion, garlic, and tomatoes. Transfer to a medium-size non-reactive skillet. Add the oregano, chili powder, salt, and water. Cook over medium heat, stirring occasionally, until the tomatoes are soft and the onions are translucent, 12 to 15 minutes.
2. Divide the sauce in half. Purée one half in a food processor, food mill, or mortar. Transfer to a bowl and stir in the remaining sauce. Serve warm, or cover, refrigerate, and use within 10 days.
