Look, Ma, no cutting! Quick, very fresh-tasting, good. You can make it even faster by cutting out the tamari, sweetener, hot sauce, and sesame, and instead using a few tablespoons of your favorite commercial stir-fry sauce. A heaping teaspoon of garlic-ginger paste, usually found in the produce section at the supermarket, hurled in with the stir-fry, is a great flavor booster.

Serves 2 to 3

8 ounces thin whole wheat spaghetti
2 teaspoons to 1 tablespoon mild vegetable oil, preferably peanut
Cooking spray
1 package (8 ounces) fresh, precut vegetable stir-fry mix
4 to 8 ounces diced tofu, any kind except silken (optional)
1 tablespoon tamari or shoyu soy sauce
1 teaspoon sugar or honey
1 teaspoon sriracha or similar hot chile paste or sauce
A few drops of toasted sesame oil

1. Start the spaghetti in vigorously boiling water.
2. As it cooks, heat the vegetable oil over medium-high heat in a nonstick skillet or wok or one that has been sprayed with cooking spray. Add the stir-fry mix and sauté for 3 minutes. Add the tamari, sugar, sriracha, and sesame oil and continue stir-frying until done, 2 to 3 minutes more, depending on the size of the vegetables. You may also throw in some diced tofu at this time.
3. Drain the cooked pasta and toss it with the stir-fry or serve the stir-fry over it.
