    SPINACH, ARTICHOKE AND PECORINO QUICHE

    INGREDIENTS (CLICK TO BUY)

    1 FreshDirect quiche shell, regular or whole wheat
    4 large eggs
    1½ cups whole milk
    ½ teaspoon salt
    ¼ teaspoon ground black pepper
    1 pack baby spinach, 5 oz
    1 cup grated Pecorino Romano cheese (order ½ lb grated)
    1 cup (½ lb) FreshDirect Italian grilled artichokes, cut into quarters
    ½ teaspoon fresh rosemary (or 1/8 teaspoon dried rosemary)

    PREPARATION

    1. Preheat the oven to 350° F.
    2. In a medium-size bowl, beat eggs, milk, salt and pepper together until well combined. Set aside.
    3. Place baby spinach in Ziplock Zip'n Steam Cooking Bag. Cook in microwave for 1 minute. Cool the spinach in the refrigerator. Once spinach is cold, squeeze out and discard the excess water.
    4. Distribute the artichoke quarters, cooked spinach, ¾ cup of Pecorino Romano cheese and rosemary evenly throughout the quiche shell. Carefully pour egg mixture over the vegetables and fill to just below the rim of the crust (you may have some leftover filling). Sprinkle the remaining ¼ cup of cheese evenly on top of the egg mixture. Make sure all the filling ingredients are coated with the egg mixture (if necessary use the back of a spoon to push the filling down).
    5. Line a baking sheet with aluminum foil and place the filled quiche on the baking sheet. Bake in 350° oven for 45 to 50 minutes. When done, the crust should be browned, and the center should be golden brown and firm to the touch. Serve immediately, or allow the quiche to cool and serve at room temperature.
