    SPRING VEGETABLE QUICHE
    from "FreshDirect Recipes"

    Serves: 4 to 6
    INGREDIENTS (CLICK TO BUY)

    1 FreshDirect quiche shell, regular or whole wheat
    4 large eggs
    1½ cup whole milk
    ¾ teaspoon salt (if adding ham, reduce to ½ teaspoon)
    ¼ teaspoon ground black pepper
    ¾ cup broccoli florets (order 1 package FreshDirect broccoli florets in microwavable bag)
    ¾ cup cut asparagus pieces (order 1 package FreshDirect asparagus in microwavable bag)
    1/3 cup frozen peas, thawed and drained
    1 tablespoon olive oil
    1 cup grated Parmigiano-Reggiano, aged 2 Years (order ½ lb grated)
    1 teaspoon fresh thyme, chopped (or ¼ teaspoon dried thyme)
    Optional: 1 cup diced ham (order ½ lb Schaller & Weber Bauernschinken [Farmer's Ham], thick cut)

    PREPARATION

    Tip: Cook and chill broccoli and asparagus before your guests arrive. Follow cooking instructions below (do not follow cooking instructions on the vegetable packages).

    1. Preheat the oven to 350° F.
    2. In a medium-size bowl, beat eggs, milk, salt and pepper together until well combined. Set aside.
    3. Cook FreshDirect broccoli florets in Microwavable Bag for 1½ minutes in the microwave (please note: this is a shorter cooking time than indicated on the bag). Once cooked, remove the broccoli from the bag and refrigerate until cool. Once broccoli is cold, cut larger florets in halves or quarters so that all of the florets are the same size.
    4. Cook FreshDirect asparagus in microwavable bag for 1½ minutes in the microwave (please note: this is a shorter cooking time than indicated on the bag). Once cooked, remove the asparagus from the bag and refrigerate until cool. Once asparagus is cold, cut it into 2-inch pieces.
    5. In another medium-size bowl, combine chilled broccoli and asparagus, thawed peas, thyme and ham (optional). Drizzle with olive oil and stir to coat the vegetables with the olive oil. Add in ¾ cup of the grated Parmigiano-Reggiano cheese. Stir to combine.
    6. Spread vegetable mixture evenly into the quiche shell. Carefully pour the egg mixture over the vegetables and fill to just below the rim of the crust. (You may have some leftover filling.) Sprinkle the remaining ¼ cup of cheese evenly on top of the egg mixture. Press down on the cheese with the back of a spoon to make sure the cheese is coated with egg.
    7. Line a baking sheet with aluminum foil and place the filled quiche on the baking sheet. Bake in 350° oven for 45 to 50 minutes. When done, the crust should be browned and the center should be golden brown and firm to the touch. Serve immediately, or allow the quiche to cool and serve at room temperature.
