    Chicken and broccoli make a classic "casserole" in this homey dish. Skip the purée and leave the mixture chunky for toddlers.

    Makes about 1 3/4 cups or 28 tablespoons
    Prep time: 10 minutes
    Total time: 60 minutes

    1 skinless, boneless chicken breast
    1 medium-size potato, peeled and diced into 1/2" cubes
    1 cup broccoli florets
    2 tbsp mild cheddar cheese, grated

    1. Set up a steamer pot and steam the chicken breast for approximately 5 minutes.
    2. Add the potato cubes and broccoli florets and steam the chicken, potato and broccoli together for 15 minutes.
    3. With a paring knife, check the chicken, broccoli and potato cubes for doneness (the chicken should no longer be pink in the center). When cooking is complete, remove the pot from the heat. Reserve the steaming water.
    4. Cool the chicken breast and slice it into 1" cubes. Add the cubes to a blender or food processor with the broccoli, potato cubes and grated cheese.
    4. Purée until smooth, adding 1 to 2 tablespoons of the steaming water, as necessary.
    5. Divide purée into 1- to 2-tablespoon portions, and use immediately or freeze.
