SALMON WITH SESAME BUTTER

The unique flavor of lime juice combined with soy sauce and sesame seeds sets these salmon steaks apart.

INGREDIENTS (CLICK TO BUY)

For the Marinade
2 tablespoons fresh lime juice
1 tablespoon vegetable oil
1 tablespoon soy sauce

For the Salmon
4 salmon steaks (about 8 ounces each)
1 tablespoon sesame seeds
1/2 teaspoon celery seeds
Sesame Butter (recipe follows), chilled

For the Sesame Butter
8 tablespoons (1 stick) unsalted butter, at room temperature
2 tablespoons toasted sesame seeds (see preparation for toasting)
2 tablespoons minced chives or scallions (green onions)
2 teaspoons sesame oil
2 teaspoons soy sauce
Freshly ground black pepper, to taste

PREPARATION

To Make the Salmon
1. Combine the marinade ingredients in a shallow bowl. Add the salmon, and turn to coat well in the mixture. Let stand, loosely covered, 1 hour.
2. Preheat the oven to 350°F.
3. Spread out the sesame and the celery seeds in a small baking pan. Place the pan in the oven and toast the seeds until they are lightly browned, 3 to 5 minutes. Check after 3 minutes and if the seeds are not done, shake the pan and continue to toast, watching carefully to prevent burning. Remove from the oven and set aside.
4. Preheat the broiler.
5. Broil the salmon steaks 5 minutes per side. Serve with 1 to 2 slices of sesame butter, each about 1/4 inch thick on top. Sprinkle with the toasted sesame and celery seeds.
To Make the Sesame Butter
Stir all ingredients together in a small bowl until smooth. Shape into a cylinder and roll in aluminum foil or waxed paper. Chill until firm.
