Though fools were originally associated with gooseberries, this dessert is delicious with a wide variety of fruit, as this combination of old-world produce proves. Use whatever apple you love best, but we prefer Golden Delicious, Jonagold, Jonathan, Macoun, Winesap and Rome apples for sautéing.

1/2 teaspoon butter
2 medium apples, peeled and cut into 1/4" slices
1 cup heavy cream
1 tablespoon granulated sugar
1/4 cup mascarpone or crème fraîche
1/3 cup fig preserves
1 dash ground cinnamon (for garnish)
4 vanilla wafers or small shortbread cookies (for garnish)

1. Melt the butter in a medium-sized sauté pan over medium-high heat. Add the apple slices to the pan and sauté until softened, then remove the pan from the heat and allow the apples to cool.
2. Pour the whipped cream into a large bowl, add the sugar and vigorously whisk the mixture until soft peaks form. Fold in the mascarpone or crème fraîche.
3. Mix the preserves with the apple slices and allow the mixture to cool completely.
4. Divide the cooled fruit mixture in half. Spoon half of the fruit evenly into the bottoms of four sundae glasses or deep wine glasses. Fold the other half into the whipped cream mixture.
5. Layer the cream mixture into each glass atop the fruit blend, then sprinkle each glass with cinnamon, garnish with vanilla wafers or shortbread cookies and serve immediately.
