There's nothing foolish about this old English dessert. Quick to make and so pretty in a parfait glass or wine glass, it's surprising the fool never caught on in the US! Pull out this recipe at your next dinner party or date night for guaranteed sophistication with very little effort.

1 cup heavy cream
1 tablespoon granulated sugar
1/4 cup mascarpone or crème fraîche
1 cup (about a half-pint) of raspberries, blackberries or blueberries
1/2 cup berry preserves
4 vanilla wafers or small shortbread cookies (for garnish)

1. Pour the whipped cream into a large bowl, add the sugar and vigorously whisk the mixture until soft peaks form. Fold in the mascarpone or crème fraîche.
2. Mix the berry preserves with half of the fresh berrries.
3. Spoon half of the berry preserves mixture evenly into the bottoms of four sundae glasses or deep wine glasses. Fold the other half of the preserves mixture into the whipped cream mixture.
4. Layer the cream mixture into each glass atop the mixed berry blend, then sprinkle each glass with additional berries, garnish with vanilla wafers or shortbread cookies and serve immediately.
