    CRISPY ROASTED KALE

    Looking for a way to get more kale into your diet? Roasting makes just about anything taste great, and this delicious recipe from our nutritionist is a snap to make.

    Makes 4 servings
    Prep time: 10 minutes
    Total time: 30 minutes
    INGREDIENTS (CLICK TO BUY)

    1 bunch kale
    1 Tbsp olive oil or olive oil spray
    2 tsp apple cider vinegar
    Sea salt, to taste

    PREPARATION

    1. Preheat the oven to 350°F.
    2. Wash kale well. Strip the leaves away from the stems (discard the stems) and cut or rip them into pieces. In a mixing bowl, toss with the olive oil (or spray lightly) to coat the leaves.
    3. Spread the prepared leaves across a baking sheet and sprinkle with the cider vinegar.
    4. Roast 10 minutes, then stir to help the leaves brown more evenly. Continue roasting until the kale is crispy (like potato chips) and very lightly browned.
    5. Remove from oven and sprinkle with sea salt. Serve hot.
