    CLASSIC CHOUCROUTE GARNI

    A classic one-pot dish from the region where France and Germany meet, this cool-weather entrée is a delicious example of cultural blending.

    To balance this heavy dish, serve alongside a crisp green salad and the remainder of the bottle of Riesling.

    Prep time: 10 minutes
    Total time: 90 minutes
    INGREDIENTS (CLICK TO BUY)

    1 medium-sized yellow onion
    4-5 whole cloves
    1/4 lb slab bacon, diced in 1/2" pieces
    5 links bratwurst
    5 smoked pork chops (kasseler rippchen) (about 1 pound)
    2 garlic cloves, crushed
    2 lb sauerkraut, drained
    1 tsp caraway seeds
    1 bay leaf
    5 juniper berries (optional)
    2 cups chicken stock
    1 cup dry white wine (Riesling works well)

    Equipment: One large, lidded, oven-proof pot or a Dutch oven

    PREPARATION

    1. Preheat oven to 350°.
    2. Peel the onion and push the pointed end of the cloves into its flesh as you would push pins into a pin cushion. (Studding the onion makes the cloves easy to remove after the dish is cooked.)
    3. In a Dutch oven or oven-proof pot with a lid, saute the bacon until it browns and renders its fat.
    4. Remove and drain the bacon and pour out and all but 2 tablespoons of the bacon grease. Brown the sausages and the pork chops on all sides.
    5. Return the bacon to the pot, adding the studded onion, garlic cloves, sauerkraut, caraway seeds, bay leaf, juniper berries (if using) and the chicken stock and Riesling.
    6. Bring the mixture to a boil, cover and move to the oven. Bake for 45 minutes to 1 hour.
    7. Discard the bay leaf and cloves, and carefully quarter the onion, returning the pieces to the pot. Serve.
