BLUE CHEESE AND HONEY BRUSCHETTA

The flavor of this hors d'oeuvre will vary dramatically depending on the type of blue cheese that you select. If you prefer something robust, try a mountain gorgonzola or Roquefort; if you'd rather keep it mild, use a gorgonzola dolce.

4 ounces blue cheese
2 tablespoons honey
1/2 baguette, thinly sliced

PREPARATION

Divide 4 ounces blue cheese among the toasted bread slices. Drizzle 2 tablespoons honey evenly over them. Heat broiler. Place the baguette rounds on a baking sheet and broil until lightly browned, about 1 1/2 minutes per side. Spread the topping on the toasted baguette.
