    GARLICKY BRAISED BEANS WITH JAMON

    Vegetables cooked al dente may be fashionable and pretty to look at, but often they can't compare to the sweet, fully realized flavor of vegetables slowly cooked. Green beans, parboiled and gently braised with garlic and smoky bits of jamón, are pretty fundamental to Spanish cooking. They're eaten more often than not as a first course or even as a light meal-fantastic topped with a fried egg! If you can find them, Italian flat beans would actually be a more authentic choice here.

    Serves 4 as a side dish

    INGREDIENTS (CLICK TO BUY)

    1 1/4 pounds string beans or broad green beans (Italian flat beans), trimmed (if using broad green beans, cut them into 2-inch lengths)
    3 to 4 tablespoons fragrant extra-virgin olive oil
    1 small onion, quartered and thinly sliced
    1 piece (3 ounces) serrano ham or prosciutto, finely diced
    3 large garlic cloves, minced
    1/4 teaspoon smoked or sweet paprika
    2 tablespoons dry sherry
    1 medium-size ripe tomato, cut in half and grated on a box grater, skin discarded
    1/2 cup chicken stock or broth, or water
    Coarse salt (kosher or sea) and freshly ground black pepper
    2 tablespoons minced fresh flat-leaf parsley, for garnish

    PREPARATION

    1. Bring a large pot of salted water to a boil. Add the beans and cook until just al dente, 3 to 4 minutes. Drain thoroughly.
    2. Heat the olive oil in a large earthenware cazuela or a deep skillet over medium-low heat. Add the onion and cook until soft but not browned, about 5 minutes. Add the ham and garlic and stir for 1 minute. Add the boiled beans and the paprika and stir to coat with the olive oil. Add the sherry, tomato, and chicken stock. Season with salt and pepper to taste, cover the cazuela, and cook the beans, stirring occasionally, until they are extremely tender and sweet and the liquid has been absorbed, about 20 minutes. Let the beans cool for about 5 minutes, then sprinkle with the parsley and serve.
