The most successful fish story we know is that of striped bass. After being fished almost to extinction during the 1980's, they were then protected by strict policies for years. Now the waters are teeming with striped bass, and we can enjoy their rich clean flavor once again.

We served this fish at our wedding celebration, held in a field of Sauvignon Blanc grapevines at Paumanok Vineyard on Long Island. The fish grilled with fresh mint was a perfect meal for a hot afternoon in a vineyard.

Serves 4
 Recipes from Home

6 fresh mint leaves, thinly slivered
2 tablespoons extra virgin olive oil
1 tablespoon Home Spice Mix (Recipe Follows)
4 striped bass fillets with skin, about 8 ounces each
Kosher salt and freshly ground black pepper to taste

Home Spice Mix
1/3 cup cumin seeds
1/3 cup coriander seeds
1/3 cup yellow mustard seeds

Whisk together the mint, oil, and spice mix in a medium bowl. Place the fillets in the marinade and turn to coat. Let the fish marinate in the refrigerator for 1 hour, then bring to room temperature for 15 minutes before grilling.
Prepare a charcoal grill.
Season both sides of the fish with salt and pepper. Place the fish skin side down and grill over a medium-high fire for 5 to 7 minutes. Turn the fish over to the flesh side and grill for 4 to 6 minutes longer. Serve hot.

Home Spice Mix (Makes 3/4 cup)
Heat a skillet over medium heat until hot. Add the cumin seeds and toss occasionally until lightly toasted, about 1 minute. Transfer to a plate to cool, and repeat with the coriander seeds and then the mustard seeds.
When the spices are cool, coarsely grind them together in a spice grinder or in a mortar with a pestle.
