    HEARTY WINTER VEGETABLE SOUP

    Winter always seems harsher in the country, so it isn't surprising that our country women prepare the most comforting soups to provide an antidote to a landscape of frozen earth, naked trees piercing slate-colored winter skies, and a darkness that falls at four in the afternoon. Hutsepot is the most traditional of Belgium's country soups, and like Italy's minestrone and Russia's borscht, it has sustained hungry country folk for centuries.

    Makes 4-6 servings
    INGREDIENTS (CLICK TO BUY)

    4 ounces lean slab bacon, cut into 1 x 1/2-inch strips
    1 medium onion, cut into 1/4-inch dice
    1 cup trimmed and halved Brussels sprouts
    1 cup diced (1/4 inch) peeled carrots
    1/2 cup diced (1/4 inch) peeled celery root (celeriac)
    1/2 cup diced (1/4 inch) peeled turnips
    1/2 cup diced (1/4 inch) peeled potatoes
    5 cups beef or chicken broth
    Salt and freshly ground black pepper to taste
    2 tablespoons finely minced fresh parsley

    PREPARATION

    1. Cook the bacon in a heavy soup pot over medium heat to render the fat, about 5 minutes. Add the onion and cook, stirring occasionally, for another 5 minutes.
    2. Add the remaining vegetables and the broth. Bring to a boil and reduce the heat. Simmer, covered, for 20 to 25 minutes. The vegetables should be cooked but not so soft that they lose their shape.
    3. Season with salt and pepper and sprinkle generously with parsley just before serving.
    Variation: For a lighter taste, substitute 1 1/2 tablespoons butter for the bacon.
