    LEBANESE-STYLE STRIPED SEA BASS

    A Lebanese treatment for sea bass takes the swimmer we usually leave mild and turns it fiery with a spicy paste painted thickly on both sides of the fish. Customarily, the fish is grilled, but the same treatment works for microwaving.

    Total Cooking Time: 5 to 7 minutes, depending on thickness of fish
    Standing Time: 2 minutes
    Serves 4
    INGREDIENTS (CLICK TO BUY)

    1/2 small onion, grated or minced
    1 clove garlic, minced or pressed
    1 tablespoon paprika
    1/8 teaspoon cayenne
    1 teaspoon ground cumin
    1/2 teaspoon fenugreek seed or 1/4 teaspoon fennel seed plus 1/4 teaspoon caraway seed
    1 tablespoon chopped fresh parsley leaves
    1 tablespoon chopped cilantro leaves
    1/2 tablespoon fresh lemon juice
    1/2 tablespoon olive oil
    1/2 teaspoon salt
    1 3/4 pound sea bass fillets, about 1/2 inch thick
    1 lime, cut into 4 wedges

    PREPARATION

    1. Mix together the onion, garlic, paprika, cayenne, cumin, fenugreek, parsley, cilantro, lemon, oil, and salt in a dish large enough to hold the fish fillets in 1 layer. Add the fish and turn to coat (see Note)
    2. Microwave, uncovered, on HIGH for 5 to 7 minutes, until the fish flakes easily when prodded with a fork. Remove and let stand for 2 minutes. Serve right away with the lime wedges.
    Note:
    You can also rub the seasoning mixture over the fish in advance and set aside in the refrigerator to marinate for up to 1 hour.
