    2 hothouse (seedless) cucumbers, peeled and seeded
    1/4 cup crème fraîche
    1/4 cup heavy cream
    1 cup finely grated Parmesan cheese
    1/4 teaspoon garlic mashed to a paste
    1/4 teaspoon Tabasco sauce
    1 tablespoon canola oil
    1 shallot, thinly sliced
    30 Littleneck clams, scrubbed
    Fine sea salt and freshly ground white pepper
    1 tablespoon fresh lemon juice

    Using an electric juicer, juice the cucumbers. Strain the juice through a fine-mesh sieve into a bowl. Measure 1 1/4 cups cucumber juice.
    Add the crème fraîche, heavy cream, Parmesan cheese, garlic, and Tabasco. Set the sauce aside to allow the flavors to marry for 30 minutes.
    Place a medium pot over medium heat and add the canola oil. When the oil is hot, add the shallot and cook until translucent; do not allow to color. Add the clams to the pot, cover, and cook until the clams are beginning to open, 3 to 5 minutes. Be careful not to overcook the clams, or they will become tough.
    Meanwhile, check the cucumber sauce for seasoning and adjust with salt and pepper as necessary. To serve, place 5 clams in each bowl. Add the lemon juice and whisk until the sauce is frothy. Spoon about 3 tablespoons sauce over each bowl. Serve immediately.
