    Greens and dried fruit are a beloved combination, common in North Africa, Sicily, and parts of the Caucasus as far back as medieval times. Sometimes black or green olives are added, sometimes curry spices (turmeric, coriander), sometimes enormous amounts of olive oil, sometimes pine nuts or feta cheese, and sometimes the whole is stuffed in a crust. This simple version uses Swiss chard, with its faint lemony undernote, but any green will do.

    This is excellent with almost any grain dish or pilaf.

    Serves 4

    2 teaspoons olive oil
    1 medium onion, chopped
    1 bunch (1 1/2 to 2 pounds) Swiss chard, well washed, tough ribs removed and finely chopped, leaves stacked and cut crosswise into 1/2-inch slices
    1 to 2 tablespoons water, preferably spring or filtered, or mild vegetable stock
    1/4 cup raisins, preferably golden
    1/4 cup green pimento-stuffed olives, sliced crosswise into thirds
    Salt (just a little, if any) and freshly ground black pepper to taste

    1. Heat the oil in nonstick Dutch oven or very deep skillet over medium heat. Add the onion and sauté for 3 minutes, then add the chard stems and sauté for another 3 to 4 minutes, by which point both the stems and onions should be softened.
    2. Add the chard leaves and sauté for 1 minute. Add the water (or stock). Stir in the raisins and olives. Cover, lower the heat, and steam for about 4 minutes. The liquid should be mostly evaporated; if not, raise the heat and cook for just a bit longer. Taste and, if necessary, add salt and pepper. Serve hot.
