    WILD RICE, LENTIL, AND MUSHROOM SOUP

    A hearty, full-flavored wintertime soup, eminently pleasurable, this started its life as a nonvegetarian soup, incorporating the post-Thanksgiving turkey gravy and the post-Christmas goose gravy. But it is simply too good to have only twice a year, or leave solely to the province of meat-eaters. Although robust, it is rich and elegant; small cups are a fine starter on a cold night when the snow is blowing, while large bowls are satisfying as an entree served with salad and bread. The wine is excellent in this, but not strictly necessary. Incidentally, it is vegan.

    INGREDIENTS (CLICK TO BUY)

    For the Soup
    1 teaspoon to 1 tablespoon olive oil
    Cooking spray
    1 onion, diced
    1 carrot, diced
    1 rib celery, diced
    2 bay leaves
    1 small handful shiitake mushrooms, cleaned, stems removed, diced
    3 cups vegetable stock
    4 cups Chicken-Style Gravy (recipe follows)
    1/2 cup hearty red wine, such as a Burgundy (optional)
    1 cup cooked lentils
    1 cup cooked wild rice
    3 large fresh tomatoes, diced, or 1 cup canned diced tomatoes
    Minced Italian parsley (optional)

    For the Chicken-Style Gravy
    4 cups full-flavored vegetable stock
    1 whole head garlic, unpeeled
    1 carrot, halved
    1 onion, coarslely chopped
    1 bay leaf
    1/2 teaspoon coarsely cracked black peppercorns
    1/4 cup nutritional yeast
    1/2 teaspoon paprika
    2 tablespoons butter or margarine or olive oil
    2 tablespoons unbleached all-purpose flour
    Salt and freshly ground black pepper to taste

    PREPARATION

    To Make the Soup
    1. Heat the oil in a large nonstick soup pot, or one that has been sprayed with cooking spray, over medium heat. Add the onion and cook for 4 minutes, or until it begins to soften. Add the carrot, celery, bay leaves, and shiitakes and continue to sauté, stirring often, for another 5 minutes. Add the stock and bring to a boil. Turn down the heat and simmer for 10 minutes.
    2. Stir in the gravy, the wine, if using, the cooked lentils, cooked wild rice, and the tomatoes. Heat through and simmer, over very low heat, for about 10 minutes more. Serve piping hot, with a little parsley, if desired.

    To Make the Gravy
    1. Combine the stock, garlic, carrot, onion, bay leaf, and cracked peppercorns in a medium saucepan. Bring to a boil over high heat, reduce the heat to a low simmer, and simmer, partially covered, for 45 minutes. Pour the stock through a strainer, reserving the stock and the whole cooked garlic. Discard the carrot, onion, and bay leaf.
    2. When the garlic is cool enough to handle, squeeze the soft garlic cloves out of their skins directly into the strained stock. Whisk in the nutritional yeast and paprika and reheat over low heat.
    3. Melt the butter over medium-low heat in a skillet and cook it gently for 2 to 3 minutes. Whisk in the flour and cook, stirring almost constantly, until the flour paste browns slightly, 3 to 4 minutes. Gradually whisk in the hot strained stock. Simmer gently until very hot and slightly thickened, about 12 minutes. If you want a thicker gravy, cook it just a little longer. Season with salt and pepper.
