Make Alison Roman's Smash Burgers

Summer 2022 can be best experienced through the art of the flat, thin, crispy, griddled smashburger. While the toppings are non-negotiable (large sheets of crunchy iceberg lettuce, thinly sliced raw and frizzled onion, dill pickles, too much mustard), the patty can be meat or plant-based with near identical experiences, reminding yourself that a smashburger is truly about the sum of its parts. Since a smashburger is not meant to be grilled (trust me on this), you should have a large skillet for maximum efficiency (12" cast iron or long, flat griddle) and a strong, sturdy spatula for smashing.
