The difference between a winter wedge and a summer wedge is a state of mind, but also the inclusion of garlicky, vinegar-marinated tomatoes which are best consumed in the summertime. There is, of course, also classic crunchy iceberg lettuce, a creamy tangy dressing, sharp blue cheese (Bayley Hazen Blue, whenever possible!) and as many fresh herbs you can get your hands on. Despite the lack of bacon (best for a winter wedge!) it's hefty enough to be a Dinner Salad, versatile enough to be a gorgeous side, and goes especially well with the accompanying grilled hot wings (two dishes, one dip!)
