Ultimate Thanksgiving Leftovers Pot Pie

Not sure what to do with your leftovers from the big meal? Use them all in one with this pie that has a little bit of everything: Preheat oven to 400. Coat a 9-inch pie dish with cooking spray. Put 2 1/2 c stuffing in a microwave-safe bowl. Microwave until warm, 30-60 sec. Stir in 2-3 tbsp chicken broth to moisten. Press stuffing into the pie dish, creating a "crust." Bake until lightly golden on edges, 20¿25 min. Meanwhile, in a large skillet, melt 2 tbsp butter. Stir in 2 tbsp flour and cook 2 min. Slowly whisk in 1 1/2 cups chicken broth and simmer until thick 2-3 min. Stir in 2 c chopped turkey and 1 c chopped vegetables and simmer 3 min. Stir in 1/2 tsp poultry seasoning, salt and pepper. Pour mixture into stuffing crust and spread out. Spread out 2 c mashed potatoes over top. Make an indent in center and pour in 2 tbsp gravy. Place dish on a sheet pan and bake until golden, 20-25 min. Let rest 10 min before serving.
