Vegetarian Cauliflower Tacos Recipe

Your favorite tacos are now vegetarian with this easy recipe. Preheat oven to 425 F. Line a large sheet with parchment and coat with cooking spray. Cut 1 cauliflower head into small florets. In a large bowl, mix 3/4 c flour, 3/4 c milk, 1 tbsp chili powder, and 1 tsp garlic powder. Season with salt and pepper. Add cauliflower to batter, coating each piece evenly. Pour coated cauliflower in an even layer onto sheet. Spray with cooking spray. Bake 15 minutes. Flip cauliflower and coat again with spray. Bake another 15 minutes. Meanwhile, place 1 avocado, 1/2 c yogurt, and zest from 1 lime in blender. Blend until smooth. Season with salt. To assemble, add cooked cauliflower to 10 tortillas and top with shredded red cabbage, chopped cilantro, and avocado sauce. Squeeze over some lime.
