Long Island Delicata Squash

The delicata squash is mildly sugary with a flavor that reminds us of sweet potatoes. We love this squash for stuffing. Scoop out the seeds, and you've got lots of room for pine nuts, shallots, mushrooms, and the rest of your favorite ingredients. The delicata is more tender than many stuffing squashes, so allow less time in the oven.
