This salad gives you the best of both worlds, with crunchy, fresh veggies as well as a hearty, grain-based Middle Eastern tabouli. We start with shredded cabbage and fennel, then fold in quinoa, cilantro, parsley, and a citrus-sumac dressing. It's an excellent side dish for any meal - simply add on your choice of protein - or you can enjoy it on its own for lunch or a light bite.
