Classic meatballs in tomato sauce
We're celebrating National Meatball Day in March with this recipe for baked meatballs that's great with red sauce: In a pan over low heat, saute a diced half onion and 2 cloves minced garlic in olive oil. Once soft but not yet brown, remove from heat and let cool. In a large bowl, mix 1 lb ground veal, 1 lb 80% ground beef, and 1 lb pork. Season with salt and pepper. Soak 6 oz of cubed bread in 1 c milk. Place in blender with 5 oz Romano cheese and pulse together. Mix into the meat 3 eggs, cooked onion, bread mixture, and 1/4 bunch chopped parsley. Coat hands with olive oil and shape mixture into balls. Bake on a sheet in oven at 500 F or in an air fryer at 450 F until browned. Add meatballs and drippings to tomato sauce and simmer gently for about one hour.
