Whether you’ve got resolutions or not, January is a time for foods that are light yet hearty: ones that are fortifying enough to fight the cold temps while also helping you come down from the excesses of the holidays. To that end, we’re totally digging this recipe from the FreshDirect team for chili with a secret ingredient: pumpkin!
The recipe uses the puréed kind to add creaminess and just a hint of sweetness. There’s also ground turkey to keep things nice and lean, along with the traditional seasonings and add-ins to give the chili plenty of flavor and body. Turkey Chili With Pumpkin Recipe
What You’ll Need
2 tablespoons olive oil
1 small yellow onion, chopped
1 medium bell pepper, cored, seeded, and chopped
2 small jalapeños, ribs and seeds removed, minced
2 cloves garlic, minced
1 lb white or dark meat ground turkey
One 14.5 oz can diced tomatoes with their liquid
One 15 oz can pumpkin purée
1 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon pepper
One 15 oz can black beans, drained and rinsed
What To Do:
Heat olive oil in a large pot over medium-high heat. Add onion, bell pepper, jalapeños, and garlic. Cook, stirring often, until tender, about 5 minutes.
Add ground turkey and break up into pieces. Cook a few minutes until browned. Stir in diced tomatoes, pumpkin purée, water, chili powder, cumin, salt, and pepper. Bring mixture to a boil, then reduce heat to low.
Stir in black beans. Cover pot and simmer, stirring occasionally, for 30 minutes. Divide between bowls and add your favorite toppings.
