About Driscoll’s Sweetest Batch™ Berries, Plus a No-Bake Cheescake

Miki Kawasaki · February 25, 2021 ·

When it comes to berries, the sweeter the better, we say!

FreshDirect offers Sweetest Batch™  berries from our friends at Driscoll’s. Each variety is specifically bred and grown to hit your tongue like a sugar drop, and that’s no exaggeration: when measured in brix units (the scale for measuring natural sugars in fruit) these berries score super high).

You can find Sweetest Batch™ blackberries, blueberries, strawberries, and raspberries on FreshDirect when they’re in season at various points through the year—something this special can only be available when they’re just right and in limited quantities. Right now, their blackberries are truly great, with a surprising sweetness and gentle acidity.

Any of these berries are perfect for finishing off your breakfast or adding to a fruit salad, although it’s hard to resist simply enjoying these gems by the handful. They’re also delightful in baked goods and desserts. Give them a try in our blackberry cheesecake bar recipe below!

No-Bake Blackberry Cheesecake Bar Recipe

What You’ll Need:

1½ cups granola
⅔ cup coconut oil, divided
½ cup blackberries, plus more for garnish
Juice of 1 lemon
⅓ cup maple syrup
1 teaspoon vanilla extract
1½ cups raw cashews, soaked in water for 3 hours

What To Do:

Place granola and ⅓ cup coconut oil in a blender or food processor. Pulse until well-combined and texture is fairly smooth, but not powdery. Press mixture into an even layer on the bottom of an 8- by 8-inch baking dish.

Clean out the blender and add the berries, lemon juice, maple syrup, remaining ⅓ cup coconut oil, vanilla extract, and soaked cashews. Blend until very smooth and creamy.

Spread mixture on top of the granola base in an even layer. Cover dish with plastic wrap and freeze for 3 hours. Cut into squares and garnish with additional blackberries, if desired, before serving.

NY Common Pantry
@NYCommonPantry reduces hunger and promotes dignity, health, and self-sufficiency throughout New York City. In 2020, NYCP distributed over 6.2 million meals to those in need. NYCP's support and services include distribution of fresh produce and groceries, nutrition education, and case management to help participants find housing and other vital services. www.nycommonpantry.org.

Meals on Main Street
Meals on Main Street / @CaritasPC 's focus is on feeding people, and their programs are designed to meet their clients' needs in a variety of ways, from pop-up pantries to home deliveries, with the help of over 500 active volunteers. Meal on Main Street began making deliveries to homes at the start of the pandemic with a list of 70 families. By the end of 2020, the list had grown to 90 and then early in 2021, to 110 families. They believe this will continue to be one aspect of their service to the community, serving those who are shut-in, quarantined, or elderly. https://www.mealsonmainst.org/

Food Pantry at the Children's Museum of the East End
After learning that 80% of families in its outreach programs were laid off last spring, the Children’s Museum of the East End in Bridgehampton, NY, launched a food pantry that is now serving over 75 families each week. In addition to addressing food insecurity, @cmee provides vulnerable families with emotional support and hope for the future. www.CMEE.org
Add this sheet pan flounder parmesan into this wee Add this sheet pan flounder parmesan into this week's meal rotation for all the flavor and almost zero the clean up. Our responsibly sourced, wild-caught flounder from our partner Icemar in Iceland pairs perfectly with a cheesy crust and juicy roasted tomatoes.

Preheat oven to 450 degrees. In a bowl, toss in 2 containers cherry tomatoes, 4 tbsp olive oil, 6 sprigs thyme, salt and pepper. Let sit 10 minutes, then transfer to a foil-lined sheet. Working in same bowl, coat 4 flounder fillets with 2 tbsp olive oil, salt and pepper. Fold each fillet in half lengthwise and arrange next to tomatoes on sheet. Combine 1/2 c grated Parmesan, 1/2 c panko, and 2 tbsp olive oil in same bowl, then sprinkle evenly over tops of fish on sheet (any extra can go on the tomatoes). Roast 12 mins; if crumbs need more browning, finish under broiler.
