Pizza quesadillas are incredibly versatile—if you’d put it on a pizza, you can put in in a quesadilla too (yes, even pineapple). Plus, they’re a great way to use up leftover pizza toppings. So next time you’re craving some game day munchies, a comfort food meal, or a midnight snack, throwing one of these together is a no-brainer.

Tips for how to make a pizza quesadilla

– Get creative with toppings: Don’t be afraid to experiment with different combinations of toppings. Try pineapple and Canadian bacon for a Hawaiian-inspired quesadilla, or add spinach and feta for a Mediterranean twist.

– Don’t overload: Too many toppings can make your quesadilla soggy. Stick to a few of your favorites.

– Add a crunch: Sprinkle and press some grated Parmesan cheese onto the outside of the tortilla before a putting it in the pan.

What You’ll Need:

Pizza toppings (pepperoni, sausage, mushrooms, onions, etc.)

Large flour tortillas

Pizza or tomato sauce

Shredded mozzarella cheese

Butter or neutral oil

What to do:

Gather your pizza toppings and chop or slice them into small-ish pieces.

Lay a tortilla on your work surface. Spread a thin layer of tomato sauce over the entire tortilla. Place a generous amount of shredded mozzarella cheese and your toppings on one half of the tortilla. Fold the empty half over the filling and gently press down to seal. Repeat with any additional ingredients.

Heat a large skillet over medium heat. Add a pat of butter or drizzle of oil to the skillet, coating the whole surface. Place the quesadilla in the skillet and cook or until golden brown and melty, for 2–3 minutes per side.

Transfer the quesadilla to your work surface and carefully cut into wedges. Serve with tomato sauce on the side for dipping.
