A Citrus & Rotisserie Chicken Salad That’s Ready In Minutes

Quick? Check. Nutritious? Check. Delicious? That’s a check. This salad with winter citrus and rotisserie chicken has got it all when it comes to staying on track with your clean eating goals.

We love how this mix of tangy fruit with hearty greens and savory chicken brings a burst of bright flavors that are so very refreshing, especially during the gray days of winter. It works with any variety of orange, grapefruit, or Mandarin, though we’re especially fond of cara cara oranges, which have a gentle sweetness. You could even try blood oranges for their striking color, or grapefruit for its juicy succulence.

To make it all complete, you’ll of course want to pick up one of our rotisserie chickens, which might just be the ultimate all-purpose meal hack. You could have it for dinner one night and use the leftovers here, or split it up between sandwiches, grain bowls, or anything else that you’re in the mood for.

And while this salad will make your everyday lunch or dinner feel extra special, it’s also dressed-up enough to serve at a dinner party or meal with friends. Give it a try with the recipe below and let it become your new wintertime go-to!


Rotisserie Chicken Salad With Winter Citrus

Serves 3–4

What You’ll Need:
1/4 cup olive oil
2 tablespoons lemon juice
Salt and pepper
2 cara cara oranges, or other sweet citrus
5 ounces salad greens, like baby arugula or kale
1 cup shredded meat from a rotisserie chicken
Half a red onion, sliced into thin rings

Optional add-ons:
One small fennel bulb, sliced
1/3 cup crumbled feta cheese
1/2 cup loosely-packed mint leaves

What To Do:
Whisk together the olive oil and lemon juice, then season to taste with salt and pepper. Set aside.

Remove the peel from your oranges, trimming away any remaining white pith. Slice crosswise into pinwheels.

Place the fruit, greens, chicken, onion, and any additional ingredients in a large bowl. Toss with as much of the lemon dressing as you like and serve.

What you'll need:
1 - 8 ounce Norwegian salmon fillet, skinned, deboned and divided into two 4 ounce fillets
½ teaspoon kosher salt
¼ teaspoon ground coriander
½ teaspoon smoked paprika
¼ teaspoon fresh cracked pepper
¼ cup honey
½ teaspoon sambal
1 tablespoon sliced red or green chilies

What you'll do:
1. In a heavy bottom sauce pan over medium high heat, add honey, sambal and chilies. Simmer for about 10 minutes. Remove pan from the heat and set aside. The longer the honey sits the more flavor the chilies release.
2. In the meantime, pat salmon dry and season with salt, coriander, smoked paprika and fresh cracked pepper.
3. Add oil to a cast iron skillet over medium high heat. Once the oil is hot, add salmon to the pan, presentation side down.
4. Cook the salmon for four minutes; flip and cook for another three minutes. Top salmon with glaze while in pan, to coat each filet.
5. Transfer to serving plates, top with more chili sauce, serve with brussels sprouts or your favorite vegetable, if desired.
