Easy Cranberry Brie Bites Appetizer Recipe

On Thanksgiving, you’ll want to put most of your effort into cooking the big guns: the turkey, the stuffing, the green bean casserole, and so on. So when it comes to the pre-meal appetizers, it’s totally OK to keep things low effort. That can be a thrown-together cheese plate, some heat and eat finger foods, or small bites composed of a few ingredients. These festive cranberry Brie bites fall right into the latter category. They’ve got that DIY touch, but with minimal DIY effort. 

This recipe uses puff pastry, the do-it-all wunderkind of easy baking, as a wrapper for tart cranberries, gooey Brie cheese, and crunchy pecans. Just cut up the rolled out dough into small squares, spoon a little bit of filling ingredients onto each, and bake until golden and flaky. It’s more of a template than a recipe, as you can really choose any fruit, cheese, or crunchy thing you like. We’ve opted for cranberries here for a festive Thanksgiving or Christmas touch, but feel free to use whatever is good and in season, including other berries, chopped apple or pear, or fresh figs. 

Cranberry Brie Bites Recipe

What You’ll Need:

8 oz Brie cheese

1 cup of cranberries (fresh or frozen)

1/4 cup of pecans

1 package of puff pastry (thawed)

2 tablespoons of Grand Marnier (or orange juice)

What to do:

Preheat oven to 400 F. Roll out puff pastry and cut into small, roughly 2-inch squares. Place a spoonful of cranberries and a slice of brie cheese on each square. Sprinkle pecans on top. Fold pastry squares into triangles and bake for 15-20 minutes. Drizzle with Grand Marnier (or orange juice) and serve warm.
