Maine-Style Fresh Lobster Rolls with Mayo Recipe

What You’ll Need:

4 cooked lobsters (about 1 1/2 lb each)*
3 tablespoons mayonnaise
1 lemon, plus zest
2 small celery stalks, chopped
4 New England-style hot dog buns
Pinch of salt and pepper
1 tablespoon butter

What to do:

Remove meat from lobsters, chopping tails into bite-sized pieces.

In a bowl, fold together lobster meat, mayonnaise, celery, 4 swipes of lemon zest, the juice of half the lemon, salt, and pepper.

Split open buns and lightly toast. Melt butter and brush on the inner sides of the toasted buns.

Carefully scoop the lobster salad into the buns and serve.
