XL Dill & Potato Latkes

These potato pancakes make a statement with heaps of herbs, deeply crisp edges, and dollops of salmon caviar.

What You’ll Need:

2–3 russet potatoes, peeled & grated
1 bunch scallions, thinly sliced
1 bunch fresh dill, finely chopped
3 eggs
1 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons sour cream
2 ounces salmon roe
Avocado oil or any neutral oil
