Harbison 5oz. is a soft ripened cheese with a rustic, washed rind. Young cheeses are wrapped in strips of spruce cambium and washed until the desired rind is developed. The texture is soft and spoonable. Cheeses are aged minimum of 10 days then packaged for sale.
