The wheels selected for FreshDirect exemplify the herbs and spicy notes you'd expect in a true Appenzeller while also displaying taste notes of juniper, tarragon, savory onion and dulce de leche qualities. Appenzeller is one of the great Swiss cheese specialties and hails from the idyllic Appenzellerland with its intact mountains and green hills. As it was 700 years ago, Appenzeller cheese is made in around 50 village cheese dairies according to an old craft tradition and a traditional recipe - without any additives from cows that east only herb grass or hay in the winter. For this Appenzeller Extra, the cheese masters only select the best of the good cheese wheels that are also suitable for long maturation from its damp cheese cellar that is held around 14 degrees Celsius (57 F) and it is only released for sale after another quality check.
