Knockout!

Knockout! was born out of a power outage at the creamery where the cheesemakers were unable to skim the excess fat from the milk. They decided to still make the cheese and with the added richness, this profile has a texture that is dense like cold butter and creamy smooth on the palate. Flavors of brown butter, mushroom broth and roasted nuts linger and finish with a light peppery note. Perfect for fondue, melting and on a cheeseboard as well.
