Hedgehog Mushrooms

No doubt the Hedgehog mushroom got its name from the furry underside of its cap — a give away to wild mushroom foragers in the know. The flavor of the Hedgehog is closest to the Chanterelle, though we find the hedgehog has a slightly more pronounced crunch in texture. Please note: To maintain quality, we suggest using a dry, medium-bristle to brush off remnants of dirt. Do not wash these in water.
