A unique citrus from Asia often given as tribute at Buddhist temples, the Buddha's Hand is an exciting and delicious fruit highly prized for its intense fragrance. The Buddha's Hand is mostly peel and non-bitter pith, so it's best used as an exotic replacement for lemon or orange zest. You can: cut the long fingers into discs and sauté with chicken or seafood; grate the aromatic flesh into salad dressings or muffin batters; make delicious preserves.
