Fava Beans

Also known as Broad Beans. Full-flavored favas are, to our mind, beans at their best. They're softer and richer than limas, with a grainier texture. They have a strong, herby taste with just a hint of pepper. They puree beautifully, and have the oomph to stand up to rich and flavorful meats like pork, lamb, bacon, and sausage.
