Also known as borlotti beans, these pink-flecked legumes are available fresh in late summer and fall. Creamy and flavorful, they're delicious in soups or stews or can be tossed with olive oil and herbs for a simple side dish (although they lose their gorgeous color once cooked). Cranberry beans are also extremely high in B-complex vitamins, plus they are a rich source of soluble fiber, essential minerals, and antioxidants.
