While it may not win a beauty award for its "birthmark" blemishes, this purple cauliflower still has a lovely violet hue that stands out on a crudité platter. In addition to having more color than its white cousin, it also packs a bit more flavor and cooks a little faster, too. Serve purple cauliflower raw or blanched. Longer cooking times will turn the purple to green.
