The flesh of this eggplant is so sweet it can be eaten raw. Delicate and tender, Chinese eggplants (they were first raised in China) must be treated lovingly, or at least tenderly. They are more fragile than other varieties and should be eaten within a few days. Delicious sliced lengthwise into stir-fry.
