Lancaster Farm Fresh Cooperative Local Organic Malabar Spinach

Although these Asian greens are unrelated to regular spinach, they are a great summer substitute when the latter is not in season. They resemble one another after cooking, but Malabar spinach has a more pronounced slippery texture. Its succulent, fleshy leaves and stems are high in vitamins A and C, with flavors of citrus and pepper that complement Asian and Indian cuisines. Excellent for salads, stir fries, and summer soups.
